Foglia Tonda, a rare and historic grape variety native to Tuscany, especially the province of Siena, offers a fascinating blend of tradition and revival. Described as early as 1877 by Count Giuseppe Di Rovasenda and later confirmed by the efforts of Breviglieri and Casini in 1964, this variety is praised for its robust structure and complex aromatics, contributing significantly to the ampelographic heritage of Tuscany.
Despite its near extinction, dedicated efforts by winemakers have led to its resurgence, particularly noted for its potential in creating deeply pigmented wines that enhance blends with their color and vibrancy.
Viticulture and Vinification
Mannucci Droandi's commitment to reviving forgotten varieties manifests beautifully in their cultivation of Foglia Tonda. Grown in optimal conditions at 250 meters above sea level on alluvial, medium-textured soil, the vineyard benefits from excellent exposure, ensuring high-quality grapes.
The meticulous vineyard management includes minimal soil tillage and careful canopy management during the summer, all contributing to the exceptional quality of the Foglia Tonda grapes.
Winemaking Process
The Foglia Tonda grapes undergo a gentle destemming and crushing process before fermentation in small-capacity vats. This is followed by an extended maceration period to extract rich colors and complex flavors. After fermentation, the wine undergoes malolactic fermentation, setting the stage for maturation.
The aging process spans 14 months in French oak barrels, which enriches the wine's flavor profile, followed by an additional three months in glass to refine its bouquet and texture.
